This pear cobbler has a soft, sugar-cookie-like topping that melts into the juicy pears underneath. The sweet fruit, the tender fresh pears, and the buttery topping create the perfect balance of comfort and sweetness.

Ingredients
  

  • 9 cups diced pears (about 7 whole ones)
  • ½ cup light brown sugar
  • 2 tsp. cornstarch
  • tsp. cinnamon
  • ¼ tsp. ground cloves
Sugar Cookie Style Topping
  • 1 cup softened butter ( I use salted)
  • 1 cup monk fruit sweetener (or white granulated sugar)
  • 1 egg (room temperature)
  • 1 cup all-purpose flour
  • 1 tsp. baking powder
  • ¼ tsp. sea salt

Method
 

  1. Preheat your oven to 375°.
  2. Dice up the pears. You don't need to peel them.
  3. In a large bowl, mix together the diced pears, brown sugar, cornstarch, cinnamon, and cloves. You want the pears to be coated.
  4. Pour the pear mixture into an ungreased 9 x 13 baking dish. Cover the pan with foil and bake for 20 minutes to soften the pears.
Sugar Cookie Style Topping (While the Pears are Baking Make This)
  1. In a large mixing bowl, beat the softened butter and monk fruit sweetener for 4 minutes.
  2. Add the room temperature egg and beat for 4 more minutes.
  3. In a medium mixing bowl, combine the flour, baking powder, and salt. Stir until incorporated.
  4. With a spoon, gradually combine the dry ingredients into the wet ingredients. Stir until just combined.
  5. Drop the cookie topping by large spoonfuls onto the top of the baked pears. Try to space them out evenly, but it is okay if not.
  6. Bake uncovered for 35 minutes or until the topping is golden brown.
  7. Serve with sea salt caramel topping, ice cream, and fresh whipped cream. Enjoy!

You can use almost any type of pears for this pear recipe, but I love to mix Bartlett pears and Bosc pears. Bartletts get soft and juicy when baked, while Boscs hold their shape and add that perfect bite. Together, they make the perfect dessert — sweet, soft, and balanced.

  • ¼ teaspoon salt

Step 1: Preheat and Prepare

Take the pears out of the oven. Drop spoonfuls of the cookie topping over the hot filling. Try to cover the surface evenly, but it doesn’t have to be perfect. Bake uncovered for another 35 minutes, until the topping is golden brown and slightly crisp on the edges.

Step 5: Serve and Enjoy

Let your cobbler cool slightly before serving. Spoon it into bowls and top with fresh whipped cream, a scoop of vanilla ice cream, and a delicious caramel topping. The sweet fruit and buttery topping make every bite cozy and satisfying. My favorite is a caramel sauce that has sea salt in it. It is thick and AMAZING.
