  • cups chopped pecans (or nut/seed mixture of choice)
  • 1 tsp. sea salt
  • ¾ tsp. ground cinnamon
  • ½ cup melted coconut oil
  • ½ cup maple syrup
  • 1 tsp. vanilla extract
  • cup dried cranberries (or dried fruit of choice)
  • ½ cup dark chocolate morsels

Method
 

  1. Preheat your oven to 350° and line a rimmed baking sheet with parchment paper.
  2. In a large mixing bowl, combine the oats, nuts, salt, and cinnamon. Stir until combined.
    4 cups old fashioned oats, 1½ cups chopped pecans (or nut/seed mixture of choice), 1 tsp. sea salt, ¾ tsp. ground cinnamon
  3. Stir in the melted oil, maple syrup, and vanilla.
    ½ cup melted coconut oil, ½ cup maple syrup, 1 tsp. vanilla extract
  4. Pour into the prepared pan and use a large spoon to spread out into an even layer.
  5. Bake for 22 minutes, remove from the oven and let cool, untouched, for 1 hour.
  6. Sprinkle on the cranberries and chocolate chips, break apart the granola and store in your favorite container or gallon baggie. Enjoy!!
