Easy Crock-Pot Green Lentil Chili with Chicken Sausage

Ingredients
  

  • 2 cups (1 lb. bag) dried green lentiles
  • 2-3 lbs. chicken sausage, sliced
  • 2 white onions, diced
  • 2 large bell peppers, chopped (any color)
  • 2 (7 oz.) cans of green chilis
  • 8 cups chicken stock
  • 8 cloves garlic, minced
  • 2 pkg. chili seasoning
  • juice of 1 lime or lemon
  • fresh cilantro for garnish
  • sour cream for toppings

Ingredients

  • 2 cups green lentils (1-pound bag), rinsed
  • 2-3 pounds chicken sausage, sliced
  • 2 white onions, chopped
  • 2–3 mixed bell peppers, chopped
  • 2 (7-ounce) cans green chiles, undrained
  • 8 cups chicken stock
  • 8 cloves garlic, minced
  • Juice of 1 lime or lemon
  • 2 packets chili seasoning, depending on your preferred flavor
  • Fresh cilantro, chopped, for garnish
  • Sour cream or Greek yogurt, for garnish

Instructions

Add the lentils, sliced chicken sausage, onions, peppers, green chiles, chicken stock, garlic, lime juice, and chili seasoning to your crock pot.

Stir to combine, then cover and cook on HIGH for 3–4 hours or LOW for 5–6 hours, or until the lentils are tender.

Serve warm topped with fresh cilantro and a dollop of sour cream or Greek yogurt.

Tip: I love using Kettle & Fire chicken stock for this recipe. For a little extra flavor, you can also adjust the amount of chili seasoning to your liking. I will also buy pre-chopped onion and peppers to save on time. Just this week, I threw this together in 10 minutes and then when we got home from the soccer game, it was ready to eat.
