How to Make the Cookies
Step 1: Make the Cookie Dough
1. Preheat oven to 350°.
2. In a large bowl, beat the softened butter, melted butter, sugar, and vanilla for 3 minutes. You can use a stand mixer or an electric hand mixer.
3. Add the egg and beat for another 2 minutes.
4. In a separate bowl, stir together the flour, cream of tartar, salt, and baking soda.
5. Add the dry ingredients to the wet mixture, mixing by hand or on low speed until just combined. Do not overmix.
Step 2: Add the Pretzel Mixture
6. Melt 3 tbsp butter and stir it into the crushed pretzels. You can crush the pretzels by putting them in a zip lock bag and lightly breaking them apart with a rolling pin.
7. Gently fold the buttery pretzel mixture into the cookie dough.
Step 3: Form the Cookies
8. Use a ⅓ cup scoop to form large dough balls.
9. Roll each ball in your hands and flatten it to about ¼ inch thick, creating a slight edge around the cookie—like making a boat for all the toppings! The center of each cookie will hold the delicious filling.
10. Place cookies on a parchment-lined baking sheet.
Step 4: Bake and Cool
11. Bake for exactly 8 minutes—no longer! Over baking will make them dry.
12. Let cookies cool on the pan for 5 minutes before transferring to a cooling rack or plate.
How to Make the Homemade Strawberry Topping
1. In a saucepan, heat frozen strawberries, water, and sugar over medium heat until the berries soften.
2. Smash the strawberries, then turn up the heat to medium-high.
3. Sprinkle gelatin over the mixture, stirring carefully to avoid lumps.
4. Boil until the gelatin fully dissolves.
5. Remove from heat and let cool before using. The strawberry mixture should be thickening up.

How to Make the Homemade Whipped Cream Cheese Icing
1. Using a mixer, beat the heavy cream on high speed until stiff peaks form. Set aside.
2. In another bowl, beat the softened cream cheese, vanilla, and powdered sugar until creamy.
3. Fold the whipped cream into the cream cheese mixture until just combined.
Assembling Each Copycat Crumbl Strawberry Pretzel Pie Cookie
1. Take the cooled cookies and spread a layer of whipped cream cheese icing inside the lipped area.
2. Spoon the strawberry topping on top.
3. Sprinkle extra crushed pretzels over the cookies—go for tiny crumbles or larger chunks for more crunch.
Store in an airtight container in the fridge—if they last that long! This recipe makes about eight Crumbl-style cookies.
