Ingredients
  

Ground Venison (or lean beef)
  • 3 lbs. ground venison (or 96/4 ground beef)
  • 1 tsp. salt (adjust to your personal taste)
  • 1-2 tsp. pepper (adjust to your personal taste)
Bacon
  • 1 pkg. bacon (around 20-25 slices, cut into small pieces)
Scrambled Eggs
  • 1 18 package eggs (I used Happy Eggs for this batch)
  • 1-2 tsp. salt (adjust to your personal taste)
  • 1-2 tsp. pepper (adjust to your personal taste)
  • 16 oz. Good cottage cheese
Southern Style Hash Browns
  • 4 lbs. total of frozen southern style hash browns
Protein Chipotle Sauce (optional)
  • 280 g. Greek yogurt
  • 25 g. mayo (light or regular)
  • 15 g. Chipotle sauce
  • 10 g. freshly squeezed lime juice (about 1 small lime)
  • ½ tsp. salt (add more to taste)
  • ½ tsp. pepper (add more to taste)

Method
 

Southern Style Hash Browns
  1. Tip: Get the hash browns in the oven, start the bacon next, get the meat browning, and then scramble the eggs. This order seems to help the flow of dinner. Assemble the bowls once everything is cooked.
  2. Spread the frozen hash browns out on a cookie sheet and season well.
  3. Bake for 35 minutes or until crispy.
  4. Broil on high for an additional 10 minutes at the end to get them extra crispy and golden brown.
Bacon
  1. Cut the bacon into small pieces and cook in a pan over medium heat.
  2. Take them out of the pan and place them on a plate covered with a paper towel.
Ground Venison
  1. While the hash browns are baking, brown the venison over medium heat in a pan. Season well.
Scrambled Eggs
  1. Scramble the eggs and the 16 oz. of cottage cheese in a pan over medium heat.
Optional Protein Chipotle Sauce
  1. Combine all ingredients into a medium bowl and stir until smooth. Season to taste.
