Stuffed Cabbage Soup with Ground Venison

Stuffed cabbage soup with ground venison is one of my favorite comfort meals on a cold day. It’s hearty. It’s simple. It tastes like home.

Method
 

  1. In a large soup pan or Dutch oven, combine the ground venison, salt, pepper, olive oil, carrots, bell pepper, garlic, and cinnamon and cook over medium heat until the meat is browned.
  2. Stir in the beef consomme, tomato sauce, and water. Bring it to a boil over high heat.
  3. Stir in the chopped cabbage, rice, paprika, Worcestershire, bay leaves, and paprika. Return this to a boil, lower the heat, and then cover and simmer for 20 minutes.
  4. Turn off the heat and let it sit for 10 minutes. Remove the bay leaves.
  5. Stir in the dill and fresh squeezed lemon juice. Enjoy!

Main Ingredients for Venison Cabbage Roll Soup

  • 1 pound ground venison or ground beef
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 2 tablespoons olive oil or avocado oil
  • 1 yellow onion, diced
  • 1 cup diced carrots
  • 1 red bell pepper, diced
  • 2 tablespoons minced garlic
  • ½ teaspoon ground cinnamon
  • Two 10-ounce cans beef consomme
  • 28 oz. can of tomato sauce 
  • 2 cups water
  • 1 small head green cabbage, chopped
  • ½ cup uncooked long grain white rice, basmati rice, or jasmine rice
  • 1 teaspoon paprika
  • 1 tablespoon brown sugar
  • 1 tablespoon Worcestershire sauce
  • 3 dried bay leaves 
  • Juice of 1 fresh lemon
  • 1 teaspoon dried dill

Directions for Stuffed Cabbage Soup Recipe with Ground Venison

Place a large soup pot over medium-high heat. Add the olive oil.

Brown the ground venison (or your ground meat choice) with the sea salt, pepper, onion, and carrots. Stir until the meat is cooked. Add in the bell pepper, garlic, and cinnamon. Cook for another couple of minutes.

Pour in the beef consomme, tomato sauce, and water. Stir everything together. Raise the heat to high. Bring it to a quick boil.

Add the chopped fresh cabbage, rice, paprika, brown sugar, Worcestershire, and bay leaves. Stir. Return the pot to a boil.

Lower the heat to low. Cover the large pot with a lid. Let it simmer for 20 minutes until the rice is tender.

Turn off the heat. Remove the lid and let the soup rest for 10 minutes. Pull out the bay leaves and toss them.

Stir in the lemon juice and dill. Give it a taste. Add more salt or pepper if you like. 

Now it’s ready to serve.

Grab a bowl. Pour it hot. This soup feels like a hug in a bowl. It is a great recipe that I think you will come back to time and time again.
