Fluffy Tapioca Pudding Recipe

Since many of you enjoy the recipes I share in my videos, here’s one of our family’s favorites! You can find the printable recipe HERE.

Ingredients

• 1 egg, separated
• 6 tablespoons sugar, divided
• 3 tablespoons Minute Tapioca
• 2 cups milk
• 1 teaspoon vanilla extract

I almost always triple this recipe because it disappears so quickly!

Instructions

1. Beat the egg white with a mixer on high speed until foamy. Gradually add 3 tablespoons of the sugar and continue beating until soft peaks form.
2. In a medium saucepan, combine the tapioca, milk, egg yolk, and remaining sugar. Let stand for 5 minutes.
3. Cook over medium heat, stirring constantly, until the mixture reaches a full boil (a boil that doesn’t stop when stirred).
4. Remove from the heat and gently fold in the egg white mixture and vanilla until blended.
5. Let cool for about 20 minutes before serving. Enjoy warm or chilled. I personally prefer it chilled!
6. Refrigerate any leftovers.

Tip: Resist the temptation to turn the heat above medium. Milk scorches easily, and once it burns, the flavor of the entire pudding is affected. Trust me on this one!
